New seafood eatery to utilize locally grown food and wines

Kicking off the summer season in “FIN-tastic” fashion, The Tropicana announced today its new seafood restaurant, FIN, will open on Friday, May 28. The restaurant will feature locally grown food and wine from New Jersey fishermen, farmers and vintners. It will be the only seafood restaurant in Atlantic City with outdoor oceanfront seating.
Perhaps the most exciting aspect of FIN is that Chef Demetrios Haronis is a local, born, bred and trained in our region. He is a graduate of the Academy of Culinary Arts at Atlantic Cape Community College in Mays Landing, and has worked at numerous restaurants from Cape May to Longport.
He joined Tropicana in 1994 as a sous-chef. He has cooked his way up the ranks in nearly all the restaurants at the Tropicana to his new post as head chef of FIN, gaining invaluable experience and perspective about how a successful restaurant works in Atlantic City. His vision for FIN is to offer a high-end culinary experience using the freshest local products that are available each season. He plans to meet with local fishermen and farmers and personally inspect their wares before purchasing.
Items on the menu at FIN created by Chef Haronis will change seasonally and range from contemporary to classic, with signature dishes such as “Chef D’s” Dancing Shrimp, made with onion panko crusted shrimp served with a lobster crab cake; Crabsickles, jumbo lump crab on a crab leg; grilled tuna ribs; and homemade oyster cracker breadsticks. There will also be a sushi and raw bar. FIN diners will enjoy fresh fish flown in from around the world. If it was fished yesterday, it will be on the menu today at 6pm.
Thoughtful attention has also been paid to FIN’s wine and cocktail menus. The wine list will feature “50 under $50,” showcasing local wines as well as a reserved list of premium selections.
“I’ve worked in restaurants along the Jersey shore my entire life," says Haronis, "and I think we will offer guests something that’s not currently available in the area — a diverse range of the freshest local seafood, complimented by local produce and wines, all at the ocean’s edge.”
All of FIN’s seats will have an ocean view. The restaurant will also have outdoor, oceanfront patio seating, weather permitting. The restaurant’s design is “sea chic,” and a modern mermaid theme will be incorporated. FIN will be open Wednesday through Sunday from 6-11pm.
There will be a glass-enclosed Captain’s Table, offering private dining for up to 10 people. Chef Demetrios and his team can create special items or Captain’s Table guests can order off the menu.

Tropicana CEO Tony Rodio is a veteran of press events, but even he admitted he was a little nervous when he was sharing the dais with a live penguin Friday afternoon at The Quarter’s Fiesta Plaza. The special penguin press conference was to introduce the new IMAX 3D film Happy Feet Two and to tell moviegoers that they could say hi to a real life penguin this Saturday and Sunday forty minutes before each show of the movie.
Atlantic City’s outpost of Cuba Libre — in Tropicana’s Havana-themed Quarter — completed an extensive reworking of its bill of fare earlier this summer. These changes reflect the personal experiences of chef/partner Guillermo Pernot during several extended visits to that long-forbidden Caribbean island.
'I think what you’ll see [Tropicana] do as we move forward is make a series of small announcements about things we’re doing to improve the property. Hopefully, maybe in about six months, we’ll have our master plan done and be able to make a big announcement about the future of the Tropicana.'
“This isn’t your typical bar in the true bar sense, but if you want to take a little break from the tables and get a drink and a bite to eat instead of a full meal, this is the way to go. This is my kind of place.”

“My wife and I had dinner at Fin’s last week. My wife had a Lobster Role appetizer, Lobster Bisque soup, and the Dancing Shrimp entrée. The appetizer was good, the soup was excellent, the main course did not live up to expectations, the shrimp was tasteless. To say it was like diner food is a stretch.
I had the Seafood Au Gratin, and to sum it up, I can tell you I have had frozen dinners that were better; it just did not taste good. The wine was good, the service was okay, the prices are outrages. The total tab including, two beers, one glass of wine, and the tip, $150.00. I wasn’t the only one not happy; save your money go somewhere else.
